About

MeetYouInMyKitchen.com About MeLet me guess…you’ve put yourself on the back burner because life is so busy taking care of your kids and family…Your schedule is so crammed with activities that you can barely get meals on the table, let alone worry about if it’s the best food you can feed your family…Researching food and nutrition is just one more thing you don’t have time for…You have a ton of healthy looking recipes on your Pinterest boards, but just not enough time to actually cook them…You’re worried that eating fast food as much as you do will eventually kick you and family in the gut (quite literally)…Or worse, you or a family member just got diagnosed with lifestyle disease like diabetes, Crohn’s disease, or colitis…

Whether you’re looking for recipes or meals plans using Whole Foods, information about the good and bad things in the food you eat, or exploring food changes as a way to prevent or reverse and disease in your family – you’re in the right place!

Maybe you feel tired of being tired all the time, or guilty about what you feed your family, or overwhelmed and uninformed about how to make healthier eating choices.  I’ve been there!

I believe we can change our lives and prevent and reverse disease by changing the way we eat. Slow and stead wins the race – small changes add up! I believe taking time now for our health saves time later in sickness and disease.

Me and My Kidlets In My Kitchen

My name is Stacie. (That’s me with my two AMAZING kidlets in our kitchen right there!) I’m a busy mom blogging about food. No, it’s not because I love to eat (but I DO!) and it’s not because I’m a really creative chef (I’m not even a chef!). I’m also not a doctor or a nutritionist. What I am is someone who was tired of being tired all the time. (Sound familiar?)

This past summer while my kids were on vacation with their dad, I got sick.  Really sick.  Like several days of 105 degree fevers.  No puking.  Just fever, weakness, and headaches with total body pain.  I’ve suffered from terrible migraines since high school.  This illness made those debilitating migraines seem like a day at the amusement park! When my fever “broke” to 102 degrees, I got in my car and drove three hours to my parents’ home (my dad is a kickass doctor!).  Upon arrival, I announced that I gave up and needed help.  They put me in bed and cared for me like I was a little kid.  Other than being physically miserable, I was in heaven from the love and care I was getting. (Normally, I hide like a hurt animal when I am sick, and don’t want any to bother or be bothered by me.) During my time there, I continued to joke that I had Zika.  But my family raised concerns about things like MS or Guillain-Barré syndrome.  Eventually, the fever, headaches, and body aches went away, but I never fully recovered.

It was so frustrating!

I had already been tired of being tired – and now this kraut?? Plus my fear level had been raised.  What if I really did have something like MS? In March of 2017, I finally said enough was enough and somehow thought maybe it was the way I was eating that was truly holding me back from getting back to 100 per cent. I found the book The End of Dieting, and then found myself introduced to the Whole30 reset diet. I figured I really had nothing to lose, and April 2017 was my reset 30 days for Whole30. This hasn’t been that long ago.  As a matter of fact, as I write this page, tomorrow is my last day of resent, and the I start reintroducing foods.

But holy kraut!

Me and My Kidlets In My Kitchen AgainAlong the way, I started to learn more about food.  The more I learned, the more guilty I felt about setting my kids up for health failure! I knew we ate too much junk, but we are all thin, so its ok, right? And wait, what exactly is that supposedly healthy food I am feeding them? Aw kraut, the guilt, THE GUILT!! So I started (and am STILL) making small changes to help my family get on track with healthier eating.

A few weeks after I started Whole30, people started asking me questions.  I thought, wouldn’t it be nice to have a plan online where I could share all the info I’ve been learning with them? And voila! Meet You In My Kitchen was born!

My goals for creating this site are:

1) create food awareness: mindful eating of real, whole foods (it can be done!)

2) share as much info as I can without being preachy (we are all adults who can make our own decisions – you be you!)

3) share recipes, food info, and menu plans on a regular basis, along with tips to help you on your own food journey

I’d love for you to join my email list! By signing up (did I mention its free?), you’ll get access to my One Week Menu Plan Using Real Whole Food, and a weekly notification of my most recent blog post.  Fill out the form to the right to sign up.

Thank you for being here.  I appreciate you!
