This past weekend, this recipe for Crockpot Lemon Garlic Chicken rescued me! I had about twelve people to feed for dinner, and I really wanted to enjoy their company instead of cooking the whole time. This recipe is so easy, and was the perfect choice. While the recipe serves four, I upped all the ingredients, and just made layers in my crockpot. Everyone seemed to like it, and I even had a bit for leftovers for lunch this past week – total score!

Crockpot Lemon Garlic Chicken
Garlic chicken with a zing of lemon means springtime done easy in the crockpot!
Ingredients
- 4 lemons
- 2-3 heads of garlic
- 4 skinless, boneless chicken breasts
- 2 tablespoons Wing of Bat from Apothecary Spices, or lemon pepper seasoning
- salt and pepper
Directions
- Step 1 Cut garlic heads in half, and lay on bottom of crockpot.
- Step 2 Slice lemons into 1/2 inch slices, and lay some on bottom of crockpot.
- Step 3 Season chicken with salt and pepper.
- Step 4 Place chicken on top of garlic and lemons in crockpot.
- Step 5 Sprinkle Wing of Bat over chicken.
- Step 6 Place additional lemon slices on top of chicken pieces.
- Step 7 Cook on low for 6-8 hours, or high for 4 hours or until juice of chicken runs clear.
