This recipe for Cucumber and Radish Salad was a surprise hit for us. It’s so fresh, you will want to make it for your next summer party. This is a great cold, non-grain side to serve with a hot steak from the grill!
TIP: If you don’t want this to be a super juicy salad, allow the cucumbers and radishes sprinkled with salt to sit at room temperature for about 15 minutes, then drain off any liquid that forms.
TIP: Slice red onions thin, but keep them long for easy removal for picky tastebuds.

Cucumber and Radish Salad
A great cold, non-grain side to serve with a hot steak from the grill!
Ingredients
- 1 large English cucumber, sliced
- 2 cups radishes, sliced
- 1/2 tsp salt
- 1 cup red onion thinly sliced
- 3 tbsp rice wine vinegar
- 2 tbsp olive oil
- 1 tsp coconut sugar
- 1 tbsp fresh dill, chopped
- black pepper, to taste
Directions
- Step 1 Combine cucumbers and radishes in large bowl.
- Step 2 Sprinkle with salt and stir.
- Step 3 Add red onions.
- Step 4 Combine remaining ingredients in small bowl and stir to combine.
- Step 5 Pour into large bowl.
- Step 6 Stir to combine.
