This finely shredded coleslaw was a quick and easy side to make when I was serving a big group of people a few weeks ago. We especially liked it the day after I made it once all the flavors had a chance to mix together!
TIP: Go with green cabbage for this one. Purple cabbage will “bleed” into the coleslaw as it sits.

Finely Shredded Coleslaw
Finely shredded coleslaw is a quick and easy way to feed a large group of people.
Ingredients
- 4 tsp vinegar
- 1/4 cup coconut sugar
- 1/4 tsp salt
- 1/4 tsp dry mustard
- 1 cup mayonnaise
- 1 head cabbage, finely shredded
- 1/4 cup carrots, finely shredded
Directions
- Step 1 Whisk vinegar, salt, dry mustard and sugar together in a large bowl.
- Step 2 Add mayonnaise. Whisk to combine.
- Step 3 Add cabbage and carrots. Stir to combine.
- Step 4 Refrigerate for 2 hours or more.
